Zesty way to keep cool

GAZPACHO is a fantastic, light and refreshing soup, loaded with goodness and packed with flavour.
Served with a crusty bread or bread rolls, it is not only quick and easy to make, it is a cool option for summer eating.
Ingredients
One litre (four cups) of tomato juice.
4 ripe tomatoes, one green capsicum and one cucumber – remove seeds and chop.
4 spring onions, finely chopped.
One-third of a cup of lemon juice, fresh squeezed is best.
One-third of a cup of basil – chopped.
One clove of garlic – crushed.
One-quarter each of black pepper and salt.
One-half teaspoon of Tabasco (use a little less for less bite).
Few sprigs of basil and Italian parsley for garnish.
Blend all ingredients in a food-processor for just two or three seconds (no more) and refrigerate for two hours.
Serve cold and garnish with finely chopped basil and parsley.
