Strawberry splash in the making

BROWNIES are a favourite at any time and this easy to bake recipe, decorated with summer strawberries, adds a gorgeous splash of colour to a Christmas table or summer picnic.

1½ cups of walnuts
½ cup of plain flour
¼ cup of sugar
½ cup of dark corn syrup
90g dark chocolate, chopped
45g butter
2 eggs, lightly beaten
2 tbs Irish creme liquor or rum
Icing sugar, strawberries and melted chocolate to decorate.

Chop walnuts into smallish pieces, sift flour and combine in a mixing bowl.
Combine sugar and corn syrup in a saucepan and stir over moderate heat until boiling. Remove from heat.
Place chocolate and butter in a saucepan and stir until chocolate has melted.
Stand until warm then add eggs and liquor to saucepan and stir until smooth.
Add the mixture to the flour and walnuts. Stir lightly until combined.
Grease a lamington tray and line with baking paper. Lightly grease paper.
Pour mix into the tray and bake at 180 degrees, 160 degrees for fan-forced, for 30 minutes, or until firm to touch.
Remove and let cool for 15 minutes, then turn onto a wire rack to cool.
Cut into 5cm squares and decorate with a dusting of icing sugar, halved strawberries and a drizzle of melted chocolate.

Gift idea: Cut into bite-size pieces, drizzle with melted white chocolate and place in a pretty gift box for the chocolate-lover in your midst!
