Gem of fruit idea drips with flavour

PEARS are a favourite autumn fruit and right now orchards in the Yarra Valley are dripping with sweet, juicy fruit.
Whether you eat them fresh from the fruit bowl or transform them into a delicious dessert such as ruby pears (below), pears are not only a healthy and delicious treat, they are also one of the most economical fruits.

Ruby Pears
Arrange peeled whole pears in a saucepan. Cover with cranberry or apple and blackcurrent juice and cook gently until tender – 10 to 15 minutes. Remove pears and set aside.
Bring the juice to the boil and boil until the liquid is reduced by half.
Spoon the juice over the pears and serve with thick cream.
Tip: If using large pears, cut in half lengthways and use a teaspoon to scoop the cores neatly out of the pear halves.
