IT’S a wrap – the whole family will love this nutritious lunch-time wrap.
Egg, Smoked Trout and Rocket Wrap
4 hard-boiled eggs
180g cold smoked trout fillet, skin removed and flaked
½ small red onion, finely sliced
65ml low fat mayonnaise
½ tbsp wholegrain mustard
1 tbsp lemon juice
Freshly ground black pepper
4 wholemeal flatbread wraps
60g rocket or watercress
1. Cut each egg into quarters and combine with flaked trout and red onion
2.Mix mayonnaise, mustard and lemon juice and season with black pepper. Toss gently through trout mixture to coat evenly
3. Lay out wraps and spoon mixture along the end of each wrap. Add rocket or watercress and roll up; serve immediately
Tip: Canned tuna or salmon can be used in place of smoked trout
